Schezwan Chicken Fried Rice


Basmatic Rice - 2 cup                                                                    
Chicken - 1/2 kg                                        
Onion - 1 finely chopped                          
Ginger-Garlic Paste - 1 tbsp
Capsicum - 1
Soya sauce -2tbsp
Schezwan Sauce - 1 tbsp
Black Pepper powder - 1tbsp
Salt - as required
Oil - 2tbsp

Cut the chicken into small pieces, wash with turmeric powder and drain.

Pressure cook the chicken with 1/2 cup of water and salt upto 1 whistle.keep aside.

Wash and soak the rice for 15 mins. Then pressure cook the rice with 3 1/2 cups of water and salt upto 2 whistle.

Heat oil in a pan and add chopped onions, fry it until they transparent. 

Next add ginger garlic paste and saute for a minute. Then add capsicum and saute on high flame for 3 to 4 mins.

Then add the cooked chicken pieces and fry for another 3 to 4 mins.Add all the sauce,salt and mix it  well .

Reduce the flame and gently add the rice and mix it well .

Finally add the pepper powder and turn off.

Serve it  with coriander leave, deep fried chicken pieces,tomato sauce and chilly sauce.

You can prepare the Schezwan Sauce at home itself - Grind few red chilli ,few garlic pods and salt .Add vinegar into that paste and mix it with rice.
