Mint Rice/ Pudina Rice

                                       
Ingredients:


Rice - 1 cups (soak in water for 20 minutes)
Oil - 1tbsp                                                       

Ghee - 2tbsp
Ginger - 1 inch
Garlic - 5 pods                                                                        
Green Chilli -3
Cumin seed -1/4 tbsp                                    

Mint leaves - 1 cup
Cashewnut - 10
Onion - half (large)
Coriander leaves - 1/2 cup
Curry leaves - few

Cardamom(elakkai)  - 2 
Cloves(kirambu)  – 2
Cinnamon(pattai)  – ¼ inch piece 
Coconut grated - 5tbsp
                                                
Method:

Heat oil and 2 tbsp of pure ghee in a cooker and add cinnamon,cloves,cardamom,cumin seeds,cashew nuts & fry it.



Add onion and fry till they turns into golden brown. 


Grind mint leaves,coriander leaves,garlic,ginger,green chilli,grated coconut into a smooth paste by adding some water.
                                          
Add the ground paste and fry till the raw smell goes off and then finally add the soaked rice, fry it for 2 minutes without water. After two minutes,add 2 cups of water to the rice and cook it for 15 to 20 minutes.

Garnish with some more cashews & serve hot with chilled raita.
