Coconut Rice/Thengai Sadam



                                                   
Ingredients:


Rice -2 cups                                                                        
Water- 4 cups
Grated Coconut-1 cups
Mustard seeds- 2 tsp
Urad dal - 1 tsp
Bengal Gram-1 tbsp 

turmeric powder - 1/4 tbsp
Red chillies -3
Ginger- 1 inch smashed
Cashew Nuts- 2 tbsp( optional)
Curry leaves- few
Oil-1 tbsp
salt - as required.






                                    
Method:

Wash the rice and pressure cook for 2 whistle & spread over the plate to cool.

Heat oil in a pan and put mustard seed and let it splutter.


Then add Bengal gram, urad dall, red chillis, turmeric powder, cashew nuts, ginger and curry leaves one by one. 

Fry untill raw smell goes off and add salt.Mix well on low flame for 2mins.Then turn off.
Now mix with cooked rice.


Serve it with pickles or Thakkali thokku.

Note:
You can add 2 to 3 drops of lemon juice to get different flavour.
