Chettinad Mutton Gravy

                                           
                                       


Ingredients :

Mutton-1/2 kg

Small onion- 25                                      
Tomato-2
Garlic-10 pods
Ginger garlic paste-1 tbsp

Red chilli powder -2 tbsp
Cinnamon-1 small piece
Cardamom-2
Clove-2
Lime juice-2 tbsp 
Curry leaves - few
Bay leaf-a small piece
Coriander leaves - few

To grind masala powder:
Coriander seeds-2 tbsp                                    
Red chillies-6
Fennel seeds-1 tbsp
Cumin seed-1 tbsp
Cinnamon-1 small piece
Cardamom-2
Clove-2

Dry roast all these items and grind them without adding water.





For Coconut paste

Grated Coconut - 3 tbsp

Cashewnuts - 5                                               
Fennel seed - 1 tbsp


Grind all these items by adding water  to a smooth paste.
                                                      
Method:

Wash and cut the mutton into small pieces.



Chopped the onion, garlic and tomatoes into small pieces. 


In a cooker, heat 2 tbsp of cooking oil. Add the Cinnamon,Cardamom,Clove,Bay leaf,curry leaf,
fennel seeds and fry it.

Then add the ginger garlic paste and stir well. Now add the chopped onion, garlic and tomatoes one by one and saute nicely. 

Add the mutton pieces along with turmeric powder now and stir it till the water oozes out from mutton. 

Now add red chilli powder and masala powder(see above topic) & Mix it well.

Add 3 cups of water and the salt needed. Mix well and close the cooker. 

Once the steam starts coming, put the weight & change the flame to medium.

After the first whistle comes, reduce the flame and cook for 10 minutes. 

Wait for the pressure to release. Once the pressure is released, open the cooker lid and add the coconut ground paste. 

If the gravy is more thick, then add a cup of water. Salt or red chilli powder can be added in this stage according to ur taste. Cook for another 5 minutes without closing the cooker. 


After that switch off the stove and add lemon juice.


Garnish with coriander leaves.




Note:


If the gravy is too watery even after adding coconut paste,you can add a spoon of coriander powder for thick gravy.
